Mixed berry cobbler
This mixed berry cobbler is a perfect dessert for Sunday Lunch. I make it with almond milk and dairy-free margarine, but if dairy is not an issue just use normal butter & milk. This version doesn’t have much sugar, so if you have a sweet tooth, add more to it.
Ingredients
Method
- Preheat the oven to 190°C.
- Measure out the sugar, reserve 1 tablespoon. Put the rest and the berries into a saucepan, then cook on low heat for about 5 minutes.
- Transfer the berries to a baking dish, sprinkle with cinnamon.
- Sift the flour into a mixing bowl, add the butter. Using your fingertips, rub the flour and butter together to make a light breadcrumb texture. Add the reserved sugar and mix thoroughly.
- Mix the eggs with the milk, add the crumble to it and knead it into a dough .
- Form 16 dumplings from the dough – drop these on top of the fruits. Sprinkle with the extra sugar .
- Bake for about 30 minutes or until the cobbler turns golden brown.
- Serve warm with cream, custard or vanilla ice cream – or Greek yoghurt.
