Orange and almond oat cookies

Being on a healthy diet doesn’t mean that you can’t have yummy treats. These orange and almond oat cookies are vegan, gluten-free and are low sugar yet absolutely delicious. Perfect for breakfast, afternoon tea or as snacks during the day.

Ingredients
  

  • 1 cup oats gluten-free
  • ½ cup almond meal
  • 2 Tbsp soft dairy -free spread or butter
  • Grated zest and juice of 1 orange
  • 25 g vanilla sugar
  • 2 tsp Stevia

Method
 

  1. Blitz the oats until you get breadcrumbs. Add the almond meal, and the spread/butter and whiz until you get a breadcrumbs-like mixture.
  2. Transfer the mixture to a bowl. Add the sugar, orange zest and juice, combine.
  3. Shape the mixture into a ball, cover and rest in the fridge for minimum 30 minutes.
  4. Preheat the oven to 180°C.
  5. Make 10-12 small ball of the dough. Flatten these between your palms into 3mm thick patties. Put these on a lined baking tray and bake for approx. 20-25 minutes until golden.
  6. Let the cookies cool and transfer them to a plate.
