Orange and Poppy Seed Muffins

These easy-to-make orange and poppy seed muffins are ideal morning or afternoon snacks –  also perfect for parties, picnics and special occasions. I reduced the sugar content of the original recipe, but if you have a sweet tooth, add some more!

Ingredients
  

  • 150 ml milk or almond milk
  • 1 Tbsp poppy seeds
  • 350 g flour
  • 1 tsp baking powder
  • 100 g unrefined cane sugar
  • 100 g butter or margarine
  • 2 eggs
  • 1 organic orange grated zest and juice

Method
 

  1. Soak the poppy seeds in 50 ml milk.
  2. Melt the butter, let it cool.
  3. Preheat the oven to 190°C. Line a muffin tin with paper cases.
  4. In a large bowl, mix the flour, sugar and baking powder .
  5. In another bowl, beat the eggs slightly and add the remaining milk, orange zest and juice, then stir in the melted butter and poppy seeds soaked in milk.
  6. Add the egg mixture to the flour, gently combine.
  7. Fill the muffin cases with the batter.
  8. Bake the muffins for about 20-25 minutes, until golden then transfer them to a wire rack to cool.
