Pan-fried sausages with peas and leek

For midweek family suppers traybakes or one pot dishes are very useful. These pan-fried sausages with peas and leek can ben served with bread, rice or mashed potatoes. It’s super easy to make – on the table within 20 minutes.

Ingredients
  

  • About 24 mini cocktail sausages
  • 1 leek thinly sliced
  • 2 cloves of garlic chopped
  • 2 cups of green peas
  • Juice of half lemon
  • 1 tsp Dijon mustard
  • Apple cider vinegar to taste
  • 2 Tbsp chopped parsley/ mint or basil

Method
 

  1. Heat some oil in a large frying pan and fry the sausages. Alternatively, you can bake or grill them in the oven.
  2. Remove them to a bowl, lined with paper kitchen towel. Put a plate on top to keep warm.
  3. Heat a spoonful in olive oil in the same pan and gently sauté the leek for about 5-8 minutes, until tender. Add the garlic and peas, the lemon juice and mustard. Add a small amount of water too.
  4. Cover with lid, turn down the heat and cook for 3-5 minutes.
  5. Add the sausages, a spoonful of vinegar and the herbs. Season with salt and pepper. Stir for a minute or so to warm through.
  6. Serve warm.
