Pork meatballs in mushroom sauce

Meatballs are very popular, with adults & kids alike, particularly in tomato sauce. These zesty pork meatballs in mushroom sauce are very tasty and very easy to make –  a nice change  if you feel like something different. You can use ready prepared meat balls too (beef ones are good too!), so you’ll only have to make the sauce! Easy-peasy for a no-fuss midweek meal! Serve with pasta, rice or a mash.

Ingredients
  

  • For the Meatballs:
  • 500 g minced pork
  • 1 small onion chopped
  • 2 Tbsp chopped parsley
  • grated zest of 1 lemon
  • For the Sauce:
  • 250 g button mushrooms
  • 1 clove garlic
  • 3 Tbsp medium sherry
  • 1 Tbsp olive oil
  • 100 g double cream or crème fraîche
  • 2 Tbsp chopped parsley

Method
 

  1. Preheat the oven to 200°C.
  2. Put the meatball ingredients into a blender and pulse until well combined. Season with salt and pepper, then knead it through. Form 12- 15 little balls, put these on a lined baking sheet and bake for 25 minutes.
  3. Meanwhile, put the mushrooms in a ovenproof dish, add the garlic and drizzle with oil. Bake for 10 minutes in the oven.
  4. Take the mushrooms out of the oven add the double cream and sherry and gently cook on the stove until you get a thick sauce. Stir in the parsley.
  5. Serve the meatballs with the mushroom sauce poured over them.
