Background

This beetroot salsa is so easy to make and it's so healthy! It's a perfect side dish for barbecues and picnics or it makes an excellent sandwich, burger, wrap filler! If you serve it with fish, use dill instead of mint.

Ingredients

2 large cooked beetroot
4 spring onions
1 red chilli
1 Tbsp chopped fresh mint
1 Tbsp lemon juice
1 Tbsp olive oil

Instructions

Dice the beetroot into 1cm cubes. Chop diagonally the spring onions. Deseed then finely chop the chilli. Mix everything together in a serving bowl.
Add the mint and season with salt and pepper. Add the lemon juice and the oil. Toss well.
