Braised red cabbage with port

Background
Braised cabbage is very much part of the classic Christmas menu. This braised red cabbage with port is especially suitable for a festive dinner party - and it can be made easily and in advance.
Ingredients
- 1 red cabbage (about 800g)
- 175 ml red port
- 175 ml water
- 3 Tbsp light brown sugar
- 3 bay leaves
- 100g raisins/sultanas
- Freshly squeezed juice of 1 lemon
Instructions
- Shred or slice the cabbage into thin strips.
- Put all ingredients in a large saucepan, season with salt & pepper.
- Cover it with a lid and gently simmer at a low heat for about 45-60 minutes until tender, stirring occasionally.
- Serve warm.
