French white bean soup

Background
This French white bean soup is a simple and healthy version of the popular Provençal White Bean Soup. It's low in calories so it's ideal for diets and the health-conscious. It's also quite easy to make and you can spice it up with some chilli if you like. It's a perfect, hearty soup for cold evenings! Serve it with crusty or wholesome bread.
Ingredients
- 2 Tbsp olive oil
- 1 red pepper
- 1 onion
- 2 garlic cloves, minced
- 250g ripe tomatoes
- 1 Tbsp chopped thyme
- 1 tin (400 g) haricot or cannellini beans
- 600 ml vegetable stock
- 2 Tbsp chopped parsley
- salt and freshly ground pepper
Instructions
- Core, deseed and chop the pepper. Finely chop the tomatoes and onion.
- Heat the oil in a heavy-based saucepan, add the onion, red pepper and garlic then sauté over a medium heat for about 5 minutes until softened.
- Add the tomatoes and thyme and cook for another minute or so.
- Rinse and drain the beans and add to the pan. Add the stock and bring it to the boil, then reduce the heat, cover and simmer for 25 minutes.
- Season with salt and pepper then stir in the parsley.
- Serve warm.
