French white bean soup

This French white bean soup is a simple and healthy version of the popular Provençal White Bean Soup. It’s low in calories so it’s ideal for diets and the health-conscious. It’s also quite easy to make and you can spice it up with some chilli if you like. It’s a perfect, hearty soup for cold evenings! Serve it with crusty or wholesome bread.

Ingredients
  

  • 2 Tbsp olive oil
  • 1 red pepper
  • 1 onion
  • 2 garlic cloves minced
  • 250 g ripe tomatoes
  • 1 Tbsp chopped thyme
  • 1 tin 400 g haricot or cannellini beans
  • 600 ml vegetable stock
  • 2 Tbsp chopped parsley
  • salt and freshly ground pepper

Method
 

  1. Core, deseed and chop the pepper. Finely chop the tomatoes and onion.
  2. Heat the oil in a heavy-based saucepan, add the onion, red pepper and garlic then sauté over a medium heat for about 5 minutes until softened.
  3. Add the tomatoes and thyme and cook for another minute or so.
  4. Rinse and drain the beans and add to the pan. Add the stock and bring it to the boil, then reduce the heat, cover and simmer for 25 minutes.
  5. Season with salt and pepper then stir in the parsley.
  6. Serve warm.
