Gluten-free mincemeat pinwheels
Background
Home-made mince pies can take different shapes, such as Christmas trees, snowballs, twists, stars and Catherine wheels. I made these easy vegan & gluten-free mincemeat pinwheels for a party last year. They were a huge success! It’s important to use good quality mincemeat, like any of these home-made mincemeat versions. If you’re not vegan, you can brush the pinwheels with egg-wash - they will be shiny and golden! These are perfect treats, nibbles and gifts during Christmas time.
Ingredients
- 1 gluten-free puff pastry, ready-rolled
- Mincemeat
- 1 Egg, whisked (optional)
- Almond flakes (optional)
Instructions
- Unroll the pastry and cut it into 10 cm squares using a pizza cutter.
- Then make a 4cm diagonal cut from each corner towards the centre of each square.
- Place a spoonful of mincemeat in the middle, then fold the left corner of each of the cut corners into the middle of the filling and press them firmly.
- Brush the pinwheels with egg-wash, if you like a shiny finish and you're not vegan. (You can scatter some almond flakes on top if you like)
- Put them on a lined baking tray and rest for 10 minutes in the fridge.
- Heat the oven to 180C, then bake the pinwheels for 10-15 minutes until golden.
- Transfer them to a cooling rack.
- When lukewarm, dust them with icing sugar and serve.
