Italian style butter beans and cabbage soup

Background
One of the easiest vegan soups is an Italian-style vegetable soup, served with gremolata. This Italian-style butter beans and cabbage soup is a good example - it's super yummy, healthy and ready in just 15 minutes.
Ingredients
- 1 carrot
- 1 onion
- 750 mL vegetable stock
- 2 cups of shredded cabbage or kale
- 100g green beans
- 1 tin of butter beans, drained
- 2 Tbsp chopped parsley
- 1 clove of garlic, minced
- Juice and grated zest of half a lemon
Instructions
- Finely chop the onion. Cut the carrot into chunks.
- Heat the oil in a saucepan and gently sauté the onion for 5 minutes, then add the carrot and stir for a minute.
- Add the stock, bring to the boil then simmer for 5 minutes.
- Add both beans and the cabbage, bring to the boil again and simmer for 5 minutes, until the greens are tender.
- Meanwhile, mix the gremolata: the chopped parsley, minced garlic, lemon juice and zest.
- When the soup is ready, turn off the heat and mix in the gremolata.
