Meatballs in tomato sauce
Background
Spaghetti and meatballs in tomato sauce is a family favourite that can be easily adjusted to your liking. For example, you can add some hidden vegetables, such as carrots and red pepper whichΒ make the sauce sweeter and the kids won't even notice as the sauce is blended! You can also add chilli, wine and cheese if you like. This recipe uses ready-to-cook meatballs (beef, lamb or pork) which make it even easier. Any leftovers can be frozen for another meal.
Ingredients
- 1 pack of ready-to-cook meatballs (about 12
- 1 red onion
- 1 clove of garlic
- 1 tin of chopped tomatoes
- 1 Tbsp tomato purée
- pinch of unrefined sugar
- 3 Tbsp chopped herbs (parsley, coriander or basil)
Instructions
- Grill or pan-fry the meatballs until brown. Put them aside.
- Finely chop the onion and garlic.
- Heat a spoonful of oil in a casserole dish, and soften the onion. Add the garlic and stir for a minute or so.
- Add the tomato purée, stir then pour in the chopped tomatoes. Cook for about 15-20 minutes until you get a thick sauce. Add most the herbs, season to taste and pulse with hand-held blender.
- Add the meatballs. Cover and simmer for another 15 minutes or so.
- Serve with pasta and the remaining herbs. You can also scatter some grated Parmesan or other cheese on the top if you like.
