Ingredients: 150g mozzarella balls (Bocconcini); 2 small zucchini (courgette); 4 sprigs of mint; 80 ml of olive oil; 1 clove garlic, pressed; 1 tsp crushed coriander seeds; 1 Tbsp grated lemon zest; Coarse salt and ground pepper (to taste)

Background

These little rolls are brilliant Italian antipasti. Perfect for parties, picnics or as nibbles with a glass of Prosecco. Assolutamente perfetto!

Ingredients

150g mozzarella balls (Bocconcini)
2 small zucchini (courgette)
4 sprigs of mint
80 ml of olive oil
1 clove garlic, pressed
1 tsp crushed coriander seeds
1 Tbsp grated lemon zest
Coarse salt and ground pepper (to taste)

Instructions

Using a vegetable peeler, slice the zucchini into thin strips.
Drain the mozzarella balls then roll them up in the zucchini slices.
Place the rolls close to each other in a sterilized , sealable jar - putting one mint leaf between each.
Mix the remaining ingredients and pour over the rolls.
Seal the jar and marinate in the fridge, ideally for 3 days - then consume it within a week.
Serve them with cocktail sticks.
