Roasted garlic hummus
When I make roast dinner I always put a bulb of garlic on the oven shelf, as roasted garlic can really jazz up salads, dips, sandwich creams, marinades and so on. This home-made hummus with roasted garlic is a good example. It’s so easy to make, takes only 5 minutes – and much cheaper, healthier and tastier than anything you can get in a food store. Serve it as a dip or, if you add more water, the thinner sauce is perfect for falafels, salads, skewers.

Method
- Put all ingredients in a blender. Season with salt and pepper, pulse, then add enough water for the paste to become thick and creamy. Add more water of you want to serve as a sauce or dressing.
- Transfer the hummus into a serving bowl, decorate with parsley, drizzle with olive oil and dust with paprika or ground cumin.
