Background
Every year I make mincemeat not just for mince pies but for other treats too during the holidays. Also, I find that a jar of homemade mincemeat is a lovely Christmas present to give to friends and family members! This spiced mincemeat is a super-easy version, made with stem ginger that gives it another dimension. It has plenty of booze too, so keeps well for months stored in the fridge! Most importantly, it’s quick and easy to make, and can be used in a couple days after cooking (I used it the very next day and it was very yummy!). You can read more about mincemeat here.
Ingredients
- 1 large green apple
- 150g mixed dried fruits
- 50g muscovado sugar
- 50 ml port
- 50 ml apple juice
- zest and juice of 1 orange
- 1 tsp ground mixed spice
- 1 tsp cinnamon
- ½ tsp ground ginger
- 2 balls of stem ginger in syrup, chopped (optional)
- ½ tsp vanilla paste
- 50g nuts (walnuts, pecans, almonds etc – or mixed)
- 2 Tbsp orange liqueur
Instructions
- Peel and grate the apple.
- Put the sugar and apple juice in a large, heavy-based pan then heat it up.
- When the sugar has dissolved, add the grated apple and all other ingredients except vanilla, nuts and orange liqueur.
- Cook for 20-30 minutes until the fruits are soft and the sauce is thick and sticky.
- Turn off the heat and add the remaining ingredients. Stir well, then spoon it into jars.
- Store in the fridge.
