Background

This is a fantastically easy yet really tasty side dish. It's super-healthy too and contains no dairy nor gluten. It goes well with most roast & fried meat or grilled fish.

Ingredients

3 garlic cloves, sliced
250g baby spinach
½ tsp dried chilli flakes
3 Tbsp olive oil

Instructions

Rinse and drain the spinach leaves, then dry with kitchen towel.
Pour the oil in a frying pan, add the chilli and garlic and turn on the heat (the oil will then gently be infused with flavours).
When the garlic begins to turn brown, add the spinach leaves - a handful at a time, after having stirred. Cover with lid and simmer for 2 minutes.
Take the pan off the heat, rest for a couple of minutes. When the spinach is wilted, season to taste and stir through.
