Roast Beef with Mustard Crust

If there’s just the two of you, but you’re wanting a proper Sunday lunch quickly and without much fuss then this very satisfying Roast Beef with Mustard Crust recipe is the one for you! It can be ready to eat within an hour – and there’s enough for a youngster too. For this purpose I used a small (450g) topside joint available in many supermarkets, but the same method could be used on a bigger piece of beef – just up the quantities and time proportionately.

Ingredients
  

  • 450 g beef topside
  • Freshly ground salt and black pepper
  • 2 Tbsp mustard English or Dijon style
  • 4 cloves garlic
  • 2 Tbsp olive oil

Method
 

  1. Preheat the oven to 190°C.
  2. Peel & finely chop the garlic the grind to a paste with a mortar and pestle. Mix together with the mustard, and oil.
  3. Make several shallow cuts in the surface of the joint. Season with the salt & pepper then rub all over with the mustard mixture.
  4. Put into a medium roasting tin (preferably on a rack), cover loosely with foil and roast for 50 minutes.
  5. Place on a carving plate to rest for 10 minutes, covered with the foil to keep warm.
  6. Serve with gravy, roast spuds and seasonal vegetables.
