Roast potatoes with paprika and garlic
Roast potatoes can be jazzed up with herbs, such as rosemary or thyme. I like adding spices too – paprika, cumin seeds, turmeric and so on. These roast potatoes with paprika and garlic are very yummy and easy to make. They fit well in a roast dinner or Sunday roast menu. If you’d like the potatoes very crispy, then mash them slightly with a fork, before adding the spiced butter, then halfway through roasting, when you turn them around.

- Preheat the oven to 180°C.
- Scrub the potatoes, then cut them into bite-sized pieces. Put them in a pan of slightly salted cold water. Bring to the boil, cook for 10 minutes, then drain.
- Transfer the potatoes to a roasting dish.
- Mix the paprika, cayenne, oregano, salt, pepper and garlic, then crumble this over the potatoes.
- Roast for 15 minutes, then turn over the potatoes, drizzle maybe with some oil, if needed and roast for another 15-20 minutes, until golden and crispy.
- Serve warm, garnished with chopped parsley.
