Roasted figs with chicory

This roasted figs with chicory is an excellent side dish that goes well with duck, goose or lamb.  The figs are roasted in a balsamic sauce that caramelizes over them, making them even more delicious and sweet. The chicory provides some sharpness and crunch.

Ingredients
  

  • 4 ripe figs
  • 1 red onion
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • 1 Tbsp unrefined cane sugar
  • 1 handful pistachios
  • 1 small head of chicory white or red

Method
 

  1. Preheat the oven to 200°C.
  2. Peel the onion, cut in half then slice thinly.
  3. Cut the figs in half or in quarters, then arrange them with the onions on a baking sheet.
  4. Drizzle with the vinegar and oil, then sprinkle with sugar. Season to taste.
  5. Bake in the oven for about 10 minutes until soft and the sugar starts to caramelise.
  6. Roughly chop the pistachios and sprinkle over the figs. Bake for another 5 minutes or so.
  7. Roughly chop the chicory, add to the figs. Season with salt and pepper and serve warm.
