Shiitake, edamame and cabbage in tomato sauce

This shiitake, edamame and cabbage in tomato sauce is a healthy dish that you can use as pasta sauce, lasagna filling  or vegetable stuffing. For this recipe you can use home-made or shop-bought tomato sauce. I used this tomato sauce.

Ingredients
  

  • 1 Tbsp olive oil
  • 1 pack shiitake
  • 1 bunch salad onion
  • 1 cup shredded dark cabbage kale, savoy or spring greens
  • 1 cup edamame beans
  • 1 Tbsp balsamic vinegar
  • 1 cup tomato sauce of your choice

Method
 

  1. Heat the oil in a pan.
  2. Sauté the onion and shiitake for about 5 minutes, adding water, when needed.
  3. When they have softened, add the shredded cabbage and beans. Sauté for another 5 minutes, until tender.
  4. Add the balsamic vinegar, stir for a minute, then add the tomato sauce.
  5. Cook for another 5 minutes or so, until the tomato sauce has warmed through.
  6. Serve warm with pasta or rice. Or let it cool and use it for lasagna or stuffed courgette, squash, pepper etc.
