Smoked goose and chicory salad

This smoked goose and chicory salad is rather special, so it’s ideal in a Christmas, New Year or other celebratory menu. You can use cured/smoked duck or other game for this recipe too, if you can’t find goose. Serve it as an appetizer with Champagne or as a starter at a festive dinner party.

Ingredients
  

  • 100 g sliced smoked goose breast
  • 1 head chicory
  • 2 handfuls of rocket leaves
  • seeds of half a pomegranate
  • 1-2 handful of almond flakes
  • Dressing:
  • 1 Tbsp pomegranate molasses see Tips
  • ½ tsp Dijon mustard
  • 2 Tbsp olive oil
  • 2 Tbsp walnut oil
  • salt and pepper

Method
 

  1. Dry-fry the almond flakes in a frying pan, set aside.
  2. Tap out the seeds of the pomegranate using the back of a spoon and remove the white membranes.
  3. Separate the chicory leaves.
  4. Arrange the rocket and chicory leaves on a serving plate then add the smoked goose slices.
  5. Whisk together the dressing.
  6. Sprinkle the salad with pomegranate seeds (about 2-3 Tbsp) and the toasted almond flakes then drizzle with the dressing just before serving.
