Smoked salmon coffin sandwiches
These smoked salmon coffin sandwiches make a spooky yet elegant addition to a Halloween party buffet. Made with dark rye or pumpernickel bread, creamy lemon and chive cheese, and silky smoked salmon, they are easy to assemble without any cooking. A few simple decorations turn the little sandwiches into miniature coffins, complete with olive crosses and caper details. If you don't have a coffin-shaped cutter, you can make a cardboard template and cut around it with a sharp knife. For an even easier finish, use balsamic glaze to draw a cross or write “RIP” on top. Serve chilled alongside other Halloween-themed savoury snacks.
Ingredients
Method
- Using a sharp knife or a small coffin-shaped biscuit cutter, cut the bread slices into coffin shapes.
- In a small bowl, mix the cream cheese with the lemon juice, chopped chives and lemon zest.
- Spread the cream cheese mixture over the bread. Place one slice on top of another to make sandwiches, reserving some cream cheese to spread over the top slice.
- Arrange a neatly folded piece of smoked salmon on each sandwich, trimming the edges to fit the coffin shape.
- Cut the black olives into thin slivers and arrange them into a small cross on the upper part of the salmon. Place a caper near the bottom point of each coffin as a decorative detail.
- Alternatively, use balsamic glaze to draw a cross or write “RIP” on the salmon.
- Arrange on a serving platter and keep refrigerated until ready to serve.
