Smoked salmon and tofu fritters

Fritters make perfect nibbles accompanied with a glass or two; or as snacks for picnic/trips; or as appetizers/starters at a dinner party – so I regularly make them.  These smoked salmon and tofu fritters are especially nice –  gluten-free and low-carb too (if gram flour is used). Most importantly, they are really delicious and are ready within 15 minutes!

Ingredients

  • 2 slices of smoked salmon
  • 100 g tofu medium-hard
  • 1 egg
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • ½ chilli optional
  • 5 spring onions finely chopped
  • Approx. ½ cup gram or buckwheat or brown rice flour
  • Sesame seeds

Method

  1. Put the salmon, egg, tofu, soy, chilli and oil in a blender and whizz until you get a smooth batter.
  2. Finely chop the spring onion and add to the batter.
  3. Add enough flour to get a thick but spreadable batter.
  4. Grease a frying pan or pancake pan and heat it over medium heat.
  5. Place dollops of the batter in the pan, then slightly flatten them, making circular shapes.
  6. Sprinkle them with sesame seeds, then flip them over, and cook for another minute or so.
  7. Transfer them to a plate and cook another batch.
  8. Serve them at room temperature with soy sauce, chilli sauce or toppings/dips of your choice.
