Spiced cauliflower steaks

These spiced cauliflower steaks can be serve as a main dish in a vegan diet or as a side dish to go with sausages, baked fish, grilled meat etc. It’s really delicious, filling, healthy – and so easy to make. You can add other spices too, such as ground cumin, coriander, turmeric etc.

Ingredients
  

  • 1 big or two medium cauliflower
  • 1 tsp paprika
  • 2 pinches of cayenne pepper
  • ½ tsp garlic powder
  • Salt and pepper
  • 3 Tbsp. olive oil
  • 1 grilled red pepper
  • 1 handful of cherry tomatoes
  • ½ cup pitted black olives
  • 1 Tbsp Chopped parsley or coriander

Method
 

  1. Preheat the oven to 180°C.
  2. Remove the leaves of the cauliflower. Cut each cauliflower into 3 or 4 thick steaks of 2cm thickness. Keep any leftover to make cauliflower rice or curry etc.
  3. Mix the olive oil with the paprika, garlic powder and cayenne (optional). Season with salt & pepper. Brush both sides of the cauliflower steaks with the spiced oil then place them on a baking try. Brush the leaves with any remaining oil (or spray these with some oil) and scatter them around the steaks.
  4. Bake in the oven for 10 minutes.
  5. Meanwhile, slice the grilled pepper and halve the tomatoes.
  6. Take the tray out of the oven and scatter the pepper slices, tomatoes and olives around them. Toss the cauliflower leaves. Bake for another 10-15 minutes, until the cauliflower is tender and golden.
  7. Scatter the chopped herbs on top, and serve warm with crusty bread, rice or couscous.
