Spicy leek fritters

These spicy leek fritters are super easy to prepare and make ideal nibbles – or offer them as appetisers at a party or dinner party. Serve them with sweet chilli sauce or toppings of your choice.

Ingredients
  

  • 100 g gram or rice flour
  • 2 eggs beaten
  • 1 Tbsp olive oil
  • 1 large leek
  • 1 garlic clove
  • 1 red chilli deseeded
  • 150 ml soda water
  • 1 Tbsp chopped coriander
  • sesame seeds optional

Method
 

  1. Heat the oil in a frying pan and gently cook the leek until soft.
  2. Finely chop the garlic and chilli. Add these to the leek and cook for a minute. Turn the heat off and let it cool.
  3. Whisk the flour, eggs and about 100 ml soda water into a smooth batter. Add the coriander and two pinches of salat. Add more water if needed (you should have a thick pancakes batter). Fold in the leek and stir well.
  4. Brush a large frying or pancake pan with a little oil and put 4 separate Tbsps of the batter into the pan, letting them spread into circular shapes. Sprinkle the top of each with some sesame seeds if used.
  5. Cook the fritters over a medium heat for a couple of minutes, then flip and cook for a further minute. Transfer them to a plate.
  6. Repeat with the remaining batter.
  7. Let them cool before serving.
