Spinach raita

This spinach raita is an ideal condiment for hot, spicy Indian dishes or as a dip with poppadoms and naan bread. I also like using it as a filler sauce with Middle-eastern style grilled meat, wrapped in flatbread or pita.

Ingredients
  

  • 1.5 tsp of ghee or vegetable oil
  • 1 clove of garlic
  • 1 tsp cumin
  • 100 g baby spinach
  • 100 ml yoghurt Greek or similar
  • Sweet paprika

Method
 

  1. Heat the oil in a saucepan and fry the garlic and cumin for a minute or two until fragrant.
  2. Add the spinach and cook for a further couple of minutes. When the spinach is just wilted, take it off the heat, let it cool and then mix with the yogurt.
  3. Sprinkle with paprika before serving.
