Tzatziki with roasted cucumber

This tzatziki  is made with roasted cucumber, which sounds a bit weird, but is actually very tasty and different to the normal, well-known sauce. So if you’re having a party, why don’t you give it a try? It’s very easy to make! You can serve it as a dip with pita or as a sauce in a kebab, or drizzled over grilled fish & meat, koftas, falafels and so on!

Ingredients
  

  • 1 cucumber
  • 1 Tbsp olive oil
  • 100 g Greek yogurt
  • 1 tsp capers in brine
  • 1 small clove garlic minced
  • 1 Tbsp chopped dill
  • 1 Tbsp chopped mint leaves
  • Juice of half a lemon
  • Salt and pepper

Method
 

  1. Preheat the oven to 200°C.
  2. Cut the ends of the cucumber, then cut it in half lengthwise and scrape the seeds out.
  3. Cut the flesh into half centimetre slices. Put them on a baking sheet in a single layer. Pour over the oil, season with a little salt, then roast for 15 minutes until light brown. Transfer them to a serving dish.
  4. Mix the yogurt with the garlic, herbs and enough lemon juice to get a runny sauce. Drain the capers and add to the cucumber..
  5. Pour the yoghurt mixture over the cucumber, toss well. Season to taste.
