Vegan and gluten-free banana bread with strawberry

This vegan and gluten-free banana and strawberry bread is super healthy as it has no added sugar, not much oil, no dairy  and no eggs. You can bake it in an air-fryer, using two small silicon loaf pans or, if you prefer a larger loaf, the oven can be used (but the baking time must increase!)

Ingredients
  

  • 2 ripe bananas
  • 2 Tbsp vegetable oil
  • 1 cup gluten-free flour
  • 2 tsp baking powder
  • ½ cup rolled gluten-free oats
  • 1 cup plant-based milk
  • 1 tsp vanilla essence
  • 1 tsp cinnamon
  • ½ cup chopped walnuts or pecans
  • For the stewed strawberries:
  • 1 cup chopped fresh strawberries
  • Juice of ½ lemon
  • 1 tsp vanilla extract
  • 2 Tbsp date or maple syrup

Method
 

  1. Put the strawberries, lemon juice, syrup and vanilla in a small pan and cook over low heat until you get a sticky, compote-like mixture (it should not become jam-like).
  2. Preheat the oven to 180°C.
  3. Line two small bread tins with paper basket or prepare a medium-large silicon loaf tin.
  4. Mash the bananas, then add the oil, vanilla essence and milk.
  5. Mix in the flour, baking powder and oats, then add the banana mixture and combine.
  6. Fold in the chopped walnuts and stewed strawberries.
  7. Transfer the mixture into the prepared tins and bake for about 35 minutes until golden.
  8. Let them cool completely, then cut them into slices.
