Vegan and gluten-free waffle

This Vegan and gluten-free waffle recipe is a good base that can be modified to your liking. For example, for a savoury waffle add some salt and poppy-seeds, ground nuts, lemon zest &juice, vegan pesto, tomato puree or grated courgette. For sweet waffle add a tablespoon of sugar, honey or maple syrup and/or orange zest and juice, cocoa powder, vanilla paste, fruit purée and so on. For these samples I’ve added grated zest and juice of a lemon and served it as savoury nibble base.

Ingredients
  

  • 1 cup oats gluten-free
  • 1 cup brown rice flour
  • 2 tsp baking powder
  • 2 Tbsp ground flax seeds
  • 1 cup oat cream or soy
  • 1 cup oat milk or another plan-based
  • 2 Tbsp vegetable oil
  • Extras: see above

Method
 

  1. Mix the oat cream and milk with the flax seeds in a small bowl.
  2. Put the oats in a small food processor and whiz until you get fine oatmeal. Transfer this to a large bowl and add the rice flour and baking powder. Combine, then add the milk mixture.
  3. Mix well and let it rest for about 30 minutes (minimum 15 min).
  4. Heat your waffle maker. Add the oil to the batter. If the batter is too thick, add more milk (it should be pourable but thicker than normal pancake batter).
  5. Spoon some batter into the waffle maker, letting it spread out evenly. Close the maker and cook for 3-5 minutes (depending on your machine). When the waffle is golden brown, move to a plate and repeat. You should be able to make about 4-6 waffles, depending on your maker.
  6. Serve warm with you chosen topping. Alternatively, cut the waffle into bite-sized slices/squares and use them as party nibble base or serve them as bread alternative.
