Vegan oat cookies with banana and seeds
These vegan oat cookies with banana and seeds are super healthy as they’re gluten-free, sugar-free, dairy-free, egg-free and fat-free. They are absolutely yummy too and really easy to make. Perfect for breakfast, school/work lunchboxes, picnics &trips, or just snacking during the day. I added some raisins to the mixture but this is optional. ( You can make it with other dried fruits too – such apricot, cherry, cranberry, blueberry etc)

- Preheat the oven to 180°C. Line a baking tray with parchment paper.
- Mash the bananas with a fork in a mixing bowl.
- Add enough oats and the other ingredients to create a malleable dough. Let it rest for about 5 minutes, until the oven warms up.
- Form eight balls from the mixture, then flatten them slightly between your palms. Put the cookies onto the prepared baking tray.
- Bake in the oven for about 20 minutes until golden.
- Transfer them a cooling rack.
