Chilli brownies

Brownies are one of easiest sweet snacks to make! These chilli brownies are spiced up a bit, making them extra special and a bit fiery. Perfect treats for parties, picnics or just with a cup of coffee to wake you up! I made them with dairy-free spread, but normal butter can be used too. The batter is enough for about 12 brownies – if you need more, double the ingredients.

Ingredients
  

  • 100 g butter or dairy-free spread
  • 50 g cocoa
  • 2 large or 3 small eggs
  • 100 g muscovado sugar
  • ½ tsp vanilla essence
  • 75 g self-raising flour
  • 1 tsp chilli flakes
  • Icing sugar for dusting

Method
 

  1. Preheat the oven to 170°C.
  2. Grease and line a small rectangular tin, about 15×15 cm.
  3. Melt the butter in a pan. Cool for 5 minutes then stir in the cocoa. Set aside.
  4. In a mixing bowl, whisk the eggs & sugar together until frothy, then add the vanilla. Stir in the egg& cocoa mixture, then the flour and finally the chilli flakes.
  5. Transfer the mixture into the tin and bake for approx. 25-30 minutes. The middle should be bit sticky.
  6. Let the cake cool completely, then cut it into squares.
  7. Dust with icing sugar before serving.
