Ingredients
Method
- Pat-dry the chicken wings and put them in a freezer bag. Add the spices and shake well until the chicken pieces are well covered.
- Mix the soy sauce, lime juice, mandarin juice and oil in a bowl, then pour over the chicken. Massage the marinade into the meat. Rest in the fridge until you’re ready to cook.
- Preheat the oven to 180C degrees.
- Put the chicken in an ovenproof dish, pour over the marinade. Add the star anise. Cut the mandarins in half, then place them between the chicken pieces, cut-side facing downwards. Cut the plum into wedges, then tuck these between the chicken wings.
- Cover the dish with foil and bake for 25 minutes. Take off the foil, turn over the chicken wings, then bake for another 10-15 minutes until golden and sticky.
- Serve warm or at room temperature.
