Chinese-style sticky chicken wings

Ingredients
  

  • 8 Chicken wings
  • 1 tsp garlic powder or 2 cloves of garlic minced
  • 1 tsp ground ginger or 1 tsp grated ginger
  • 1 tbsp five spice mixture
  • ½ tsp ground pepper
  • 2 tbsp Soy sauce
  • 1 tbsp sesame or vegetable oil
  • 1 lime juiced
  • 1 star anise
  • ½ cup mandarin juice
  • 1 plum
  • 1 tbsp xo sauce or plum sauce
  • 2 mandarins

Method
 

  1. Pat-dry the chicken wings and put them in a freezer bag. Add the spices and shake well until the chicken pieces are well covered.
  2. Mix the soy sauce, lime juice, mandarin juice and oil in a bowl, then pour over the chicken. Massage the marinade into the meat. Rest in the fridge until you’re ready to cook.
  3. Preheat the oven to 180C degrees.
  4. Put the chicken in an ovenproof dish, pour over the marinade. Add the star anise. Cut the mandarins in half, then place them between the chicken pieces, cut-side facing downwards. Cut the plum into wedges, then tuck these between the chicken wings.
  5. Cover the dish with foil and bake for 25 minutes. Take off the foil, turn over the chicken wings, then bake for another 10-15 minutes until golden and sticky.
  6. Serve warm or at room temperature.
