Bagel with smoked salmon and quail egg
If you want to surprise your loved one with a yummy (but super easy) breakfast or brunch, this bagel with smoked salmon and quail egg ticks all the boxes! I used gluten-free bagels and dairy-free spread, but free feel to adjust the recipe to your liking.

Method
- Put the quail eggs in a pan of cold water – make sure the water covers them well. Bring to the boil and turn off the heat immediately. Put a lid on, then rest for 1-3 minutes, depending how runny/soft you’d like the yolk. Drain, then rinse with cold water. Rest them in cold water for ten minutes then remove the shells.
- Cut the bagels in half and lightly toast or grill them.
- Spread some cream cheese or dairy-free on the base of the bagels, then add some rocket leaves and the smoked salmon.
- Squeeze some lemon juice on top and season with pepper.
- Cut the quail eggs in half and put them on top of the salmon.
- Drizzle with some balsamic glaze, then serve.
