Gluten-free chocolate waffles

These dairy-free and gluten-free chocolate waffles are made with honey or maple syrup so they are more healthy than usual. They are very easy to make, and you can serve them with your favourite topping such as compote, jam, ice/cream, yogurt, custard, chocolate sauce, fresh fruits and so on. They are nice cold too, ideal for snacks during the day.

Ingredients
  

  • 2 cups self-raising gluten-free flour mixture
  • 2 eggs
  • 1 cup plant-based milk oat, almond, coconut
  • 1 tsp vanilla essence
  • 2 Tbsp cocoa powder
  • 2 Tbsp honey or maple syrup
  • 1 tsp oil
  • Oil spray

Method
 

  1. Mix the ingredients well. It should be pourable but thicker than normal pancake batter, so add more milk if needed). Rest for about 10 minutes, if time allows.
  2. Heat your waffle maker.
  3. Spray the hotplates with little oil, then spoon some batter into the lower one, letting it spread out evenly. Close the maker and cook for 3-5 minutes (depending on your machine). When the waffle is golden, move it to a plate and repeat with the rest of the batter. You should be able to make about 4 waffles, depending on your waffle maker.
  4. Serve warm with you chosen topping.
