Baked Marrow with feta

This baked marrow with feta can be served as a side dish (with grilled fish or meat), as a light lunch (on a piece of toast), or as part of a mezze. It’s lovely, delicate and very easy to make.

Ingredients
  

  • 1 small marrow
  • 2 Tbsp olive oil
  • 1 Tbsp honey
  • 100 g feta
  • 1 Tbsp chopped dill
  • Honey to serve

Method
 

  1. Preheat the oven to 180°C.
  2. Cut the marrow in half (horizontally), then scoop out the seeds. Cut the marrow into 1 cm half-moon shaped pieces.
  3. Arrange the marrow pieces in a baking dish, then brush or spray with olive oil on both sides. Drizzle with honey and bake for about 20 minutes until soft and light brown. Crumble the feta over it and bake for another 5 minutes or until golden.
  4. Scatter the dill on top and drizzle with some more honey just before serving.
