Tomato and edamame salad

This tomato and edamame salad  goes well with Japanese-style grilled fish, meat or tofu. It only takes 5 minutes to make. It’s vegan, healthy and really tasty too!

Ingredients
  

  • 150 g mixed tomatoes
  • 3 or 4 spring onions
  • 1 cup frozen edamame beans
  • 1 Tbsp Kikkoman soy sauce
  • 1/ 2 tsp toasted sesame oil
  • 1 tsp rapeseed oil
  • 1 Tbsp rice wine vinegar
  • Pinch of palm sugar
  • ½ tsp sesame seed
  • Lime juice

Method
 

  1. Steam or blanch the beans until tender, then rinse under cold water. Drain and put the beans in a serving bowl.
  2. Thinly slice the spring onions and cut the tomatoes in half, then add these to the beans.
  3. Whisk the soy sauce, rice wine vinegar, oils and sugar, then pour it over the beans. Add some lime juice and mix well. Taste and adjust it to your liking.
  4. Pour this mixture over the vegetables and toss. Scatter the sesame seeds on top.
  5. Let it rest for a few minutes before serving.
