Ingredients

  • 8 chicken thighs and/or drumstick
  • 3 Tbsp Dijon mustard
  • 1 Tbsp olive oil
  • 1 Tbsp dried dill
  • 2 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • Juice of ½ lemon
  • Couple of pinches of salt
  • Freshly ground black pepper
  • Fresh chopped dill for garnish optional

Method

  1. In bowl, whisk together the mustard, oil, dried dill, Worcestershire, garlic powder, lemon juice, salt & pepper.
  2. Put the chicken pieces in a freezer bag and pour over the marinade. Close the bag then shake it or massage the chicken well to coat them evenly with the paste.
  3. Refrigerate for minimum 30 minutes, preferably longer.
  4. Heat your BBQ.
  5. Barbecue/grill the chicken over direct medium heat until lightly charred all over, turning them regularly. Move them to the upper shelf or the side and cook over indirect medium heat (skin side up) until properly cooked through.
  6. Serve the chicken, garnished with fresh dill, if you like.
