Vegan apple and blackberry oat cookies

These vegan apple and blackberry oat cookies are super easy to make, they have no extra sugar and gluten-free oats can be used too. So overall they are quite healthy, particularly if made with homemadelow-sugar blackberry jam.

Ingredients
  

  • 2 ripe bananas
  • 1 green apple grated
  • 1 cup oats gluten-free, if needed
  • 1 tsp ground cinnamon
  • 1 tsp vanilla paste
  • 3 Tbsp blackberry jam
  • 1 Tbsp oil

Method
 

  1. Mash the bananas with a fork or blend them in a blender.
  2. Add the oats, cinnamon, vanilla and grated apple, then mix well.
  3. Let the mixture rest for a few minutes.
  4. Preheat oven to 180°C and line a baking tray with parchment paper.
  5. Add the jam to the mixture and combine gently. If it’s too thick, add some apple juice or plant-based milk.
  6. Make equal sized patties from the mixture, then press them between your palms. Place them on the baking tray.
  7. Bake in the oven for approx. 15 minutes until golden.
  8. Let them cool on a wire-rack.
