Caramelized onion and red pepper omelette with goats cheese

This caramelized onion and red pepper omelette with goats cheese is easy and tasty, perfect for a weekend brunch. It’s a vegetarian version, but you can add pancetta or Parma ham to the recipe if desired. Serve it with fresh bread and a crispy salad on the side.

Ingredients
  

  • 3 small or 2 large eggs
  • ½ red onion
  • ½ red bell pepper
  • Pinch or marjoram
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • Basil or mint leaves
  • 30 g hard or soft goats’ cheese crumbled

Method
 

  1. Lightly whisk the eggs in a small bowl. Stir in two pinches of salt and set aside.
  2. Thinly slice the pepper and the onion.
  3. Heat the oil in a frying pan. Add the onion and pepper and gently sauté, over low heat, until soft. Add a pinch of marjoram and the balsamic vinegar, then stir until the onion and red pepper have caramelized.Transfer the mixture to a plate.
  4. Clean the pan with kitchen towels (or use a pancake pan), then add a small spoonful of oil.
  5. Pour in the eggs, letting the mixture spread put evenly.
  6. When it’s half cooked through, crumble the cheese all over it.
  7. Cover with a lid, turn off the heat, then gently cook for about 3 minutes, or until the top of the omelette has just set.
  8. Spoon the caramelized onion and red pepper over half of the omelette, scatter some fresh herbs on top and season with salt & pepper. You can add a pinch of chilli flakes too.
  9. Fold the omelette in half. Cook for a few seconds, then slide it to a plate.
  10. Serve warm.
