Spiced apple and blueberry crumble

Ingredients
  

  • 2 cooking apples
  • 200 g blueberries
  • 1 handful walnut pieces
  • Juice of ½ lemon
  • 2 tsp cinnamon
  • 1 tsp ginger
  • ½ cup muscovado sugar
  • 1 cup flour gluten-free, if needed
  • 1 cup rolled oats gluten-free, if needed
  • ½ cup unrefined muscovado sugar
  • ½ cup ground walnuts
  • 75 g plant-based soft butter margarine or spread

Method
 

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, then chop them into bite-sized pieces. Arrange them into a lightly greased baking dish, then scatter the blueberries and walnuts around them.
  3. Squeeze the lemon juice on top, then dust with about half of the sugar and cinnamon.
  4. In a bowl, rub the margarine/spread with the flour, oats, ground walnuts, ginger and the remaining sugar & cinnamon until you get lumpy, sticky crumble. Add more butter/margarine if it feels too dry.
  5. Cover the fruits with the crumble, slightly pressing it down with the base of a spoon.
  6. Bake for about 20-25 minutes until golden.
  7. Serve warm.
