Leftover turkey fried rice
This leftover turkey fried rice is perfect for using up roasted turkey (or chicken, duck etc ). It’s very easy to make and you can use other veggies if preferred (such as courgette, broad beans, savoy cabbage etc). For a more spicy version you can add ginger, cinnamon, chilli, turmeric, coriander powder and garam masala.

- Thinly slice the onion, chop the garlic, carrot and celery.
- Cook the rice, if you don’t have any precooked leftover.
- Heat the oil in a large pan, add all the chopped veggies and gently sauté them for about 8 minutes, until soft and a bit brown.
- Add the spices, stir for a minute, then add the stock.
- Bring to the boil then cook for a couple of minutes, then add the greens and cook for 3 minutes or so, under a lid.
- Add the sultanas, if used, then stir in the turkey meat and warm through.
- Stir in the cooked rice and parsley leaves and combine well.
- Serve warm.
