Quorn pieces in tomato sauce
For vegetarians and vegans Quorn is an important sauce. It’s made from mycoprotein, providing nine essential amino acids. It’s also high in fiber, vitamins and minerals, yet low in saturated fat. Quorn pieces look like diced chicken and can be used the same way – for stews, stir-fry, ragu, salad and so on. The vegetarian version contains egg-white, so if you’re vegan, make sure you buy the correct product. These Quorn pieces in tomato sauce is an easy, healthy recipe – you can serve it with rice, pasta, baked potatoes or on toast.

- Cut the onion, celery, carrot and garlic into tiny pieces.
- In a large pan, heat the olive oil and gently soften the chopped vegetables.
- Add the herbs, stir for a few seconds, then add the tomato purée and bay leaf and stir again.
- Add the tinned tomatoes, then one and a half tin of water. Add the stock cube and bring to the boil.
- Cook for 20 minutes, then remove the bay leaf. Using a stick blender, process the stew until you get a thick, textured sauce.
- Add the Quorn pieces and cook for 10 minutes, then add your chosen green vegetables and cook for another 5 minutes or so.
- Serve with fresh herbs scattered on top.
