Balsamic baked tomatoes

You can serve this balsamic baked tomatoes with grilled meat or fish or you could use it as pasta & stew base sauce (just whiz it up in a blender); or as pizza topping; or as stuffing in puff pastry pies and tartlets. It’s very easy to make and you can use other herbs such as thyme or dried  oregano, marjoram etc. It’s best to use really ripe tomatoes or you might need to add a pinch of sugar to the dish.
