Shiitake and green beans stir-fry

This Japanese-style shiitake and green beans stir-fry goes really well with Teriyaki chicken or salmon. If you’re vegan or vegetarian, just add some tofu and serve it with noddle or rice for a meal.

Ingredients
  

  • 125 g shiitake
  • 100 g green beans
  • 1 bunch spring onion
  • 1 Tbsp oil
  • 2 Tbsp Kikkoman soy sauce
  • 1 tsp rice viniger
  • 2 tsp Mirin
  • 1 tsp Miso
  • 1 tsp Sesame seeds

Method
 

  1. Thinly slice the mushrooms and spring onions.
  2. Heat the oil in a frying pan or wok over medium heat. When it’s hot, add the mushroom and cover. Turn down the heat and sauté for 5 minutes until the mushrooms have released some liquid.
  3. Add the spring onion pieces and fry for a minute.
  4. Add the soy sauce, mirin, miso, rice vinegar and the beans to the mushrooms, put the lid on and sauté for another 3-5 minutes over low heat until the vegetables are tender. Taste, and adjust to your liking.
  5. Serve with the sesame seeds scattered on top.
