Garlic spinach with prawns

This garlic spinach with prawns is a fantastic starter or you can serve it as a tapa with a glass of aperitif. You could also serve it for a quick & easy lunch with toasted sourdough bread.

Ingredients
  

  • 3 garlic cloves sliced
  • 3 spring onions sliced
  • 2 Tbsp olive oil
  • 250 g baby spinach
  • ½ tsp dried chilli flakes
  • 1 lemon juiced
  • 150 g prawns peeled

Method
 

  1. Rinse and drain the spinach leaves, set aside.
  2. Pour the oil in a frying pan, add the spring onion and garlic slices and turn on the heat.
  3. When they begin to turn brown, add the chilli and spinach leaves – a handful at a time, then stir. Add the lemon juice, cover with the lid and simmer for 2-3 minutes.
  4. Put the prawns on top of the wilted spinach, cover with the lid and steam for 2-3 minutes, until the prawns have changed colour. If you’re using ready cooked prawns, just warm them through for a minute or so.
  5. Take the pan off the heat, rest for a couple of minutes. Season to taste, then serve with paprika dusted on top.
