Vegan banana and walnut muffin

The recipe of this vegan banana and walnut muffin is super easy and only needs one dish. It’s healthy and you can use gluten-free flour too if your diet requires it. If the bananas are very ripe, you won’t need any maple syrup.

Ingredients
  

  • 3 ripe bananas
  • 1 cup flour
  • 1 tsp baking powder
  • 2 Tbsp maple syrup
  • 1 handful walnuts
  • 1 tsp cinnamon
  • 1 tsp of vanilla

Method
 

  1. Preheat the oven to 180°C. Prepare 6 silicon muffin cases or line a muffin tin with paper cases.
  2. Mash the bananas with a fork then add the flour and baking powder.
  3. Mix well, then add the maple syrup, oil, vanilla and cinnamon. Combine well.
  4. Finely chop the walnuts and fold into the batter.
  5. Divide the batter equally between the prepared cases, then bake the muffins in the middle of the oven for 20-25 minutes.
  6. Let them cool in the cases, then transfer them to a wire-rack to cool completely.
