Avocado waffles with salsa

Savoury waffles can be used as a base for party nibbles or eaten instead of bread. These avocado waffles with salsa are yummy and filling – you can add ham or chorizo, if liked. For a vegan version, use egg alternative such as flax-egg.

Ingredients
  

  • 1 avocado
  • 1.5 cup self-raising flour
  • 2 eggs
  • 1 cup plant-based or normal milk
  • ½ tsp salt
  • For the salsa:
  • 3 tomatoes
  • 4 spring onions
  • ½ bell pepper
  • 1 Tbsp chopped coriander or parsley leaves
  • 1 Tbsp olive oil
  • ½ lemon juice
  • 1 clove of garlic minced (optional)
  • ½ red chilli optional

Method
 

  1. Put the avocado flesh, eggs and the milk in a blender. Pulse for a few seconds then add the flour, baking powder, oil, salt and add more milk, if needed, to have a thick, but pourable batter.
  2. Heat the waffle maker. Once it’s hot, spoon in the batter and seal. Following the machine instructions, cook the waffles for about 5 minutes – they should be golden and crispy on the outside, soft inside. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
  3. Meanwhile, make the salsa: chop the tomatoes, bell pepper, spring onion, chilli (if used) and herbs, then put them in a mixing bowl. Add the garlic, oil, lemon juice and a pinch of salt. Combine, taste and adjust to your liking.
  4. Serve the waffles warm or at room temperature with the salsa.
