Banana and almond waffles
These banana waffles are very easy to make. Perfect for a lazy weekend breakfast or brunch, or a dessert after Sunday lunch, served with caramelized bananas and vanilla custard.

- Put the bananas, eggs, vanilla essence, oil and milk in a blender. Pulse for a few seconds, until you get a smooth paste. Add the flour, ground almond and baking powder, then then pulse for a few more seconds. Add more milk, if needed – you should have a thick, but pourable batter.
- Heat the waffle maker. Once it’s hot, spoon in the batter, then seal.
- Following the machine instructions, cook the waffles for about 5 minutes – they should be golden brown and crispy. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
- Serve the waffles with banana slices and maple syrup. Alternatively you can make some caramelized bananas for the topping while the waffles are cooking (just slice the bananas and fry them with some brown sugar and lemon juice until they are caramelised).
