Balsamic baked red cabbage steak

You can serve this balsamic baked red cabbage steak as a vegan “steak” or as a side dish with your Sunday roast or fried/grilled meat. It goes particularly well with pork and poultry. For a vegan version use maple or date syrup, otherwise honey works really well.

Ingredients
  

  • 1 red cabbage
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 Tbsp honey or maple syrup
  • Salt and pepper
  • Optional: garlic powder chilli powder

Method
 

  1. Preheat the oven to 180°C.
  2. Cut the cabbage into 1cm thick steaks. You should get about 6
  3. Put them on a baking tray lined with parchment paper.
  4. Mix the vinegar, oil, mustard and honey. Add a pinch of garlic powder or chilli powder if you want the steaks to have more flavour. Season with salt and pepper to your liking.
  5. Brush the cabbage steaks with this mixture, on both sides, then put the tray in the oven.
  6. Bake for 20 minutes or until the cabbage steaks become tender.
  7. Serve with fresh herbs and/or balsamic glaze.
