Balsamic baked red cabbage steak
You can serve this balsamic baked red cabbage steak as a vegan “steak” or as a side dish with your Sunday roast or fried/grilled meat. It goes particularly well with pork and poultry. For a vegan version use maple or date syrup, otherwise honey works really well.

- Preheat the oven to 180°C.
- Cut the cabbage into 1cm thick steaks. You should get about 6
- Put them on a baking tray lined with parchment paper.
- Mix the vinegar, oil, mustard and honey. Add a pinch of garlic powder or chilli powder if you want the steaks to have more flavour. Season with salt and pepper to your liking.
- Brush the cabbage steaks with this mixture, on both sides, then put the tray in the oven.
- Bake for 20 minutes or until the cabbage steaks become tender.
- Serve with fresh herbs and/or balsamic glaze.
