Ingredients

  • 2 ripe bananas
  • 1 cup oats gluten-free if needed
  • 3 Tbsp ground almond
  • 1 tsp ground cinnamon optional
  • 1 tsp vanilla essence
  • 1 Tbsp vegetable oil optional
  • 3 Tbsp dried sour cherries

Method

  1. Mash the bananas with a fork or blend them in a blender.
  2. Add the oats, ground almond, cinnamon, vanilla and sour cherries, then mix well.
  3. Let the mixture rest for a few minutes. Meanwhile, preheat the oven to 180°C and line a baking tray with parchment paper.
  4. If the batter becomes too thick, add some apple juice or plant-based milk. It should be thick but malleable.
  5. Using your hands, make equal sized balls, then press them between your palms. Place them on the prepared baking tray.
  6. Bake in the oven for approx. 15-20 minutes until golden.
  7. Let them cool on a wire-rack and serve.
